Vegan Sweet Potato Banana Bread with Avocado Oil - also known as the banana bread of your dreams. This recipe is made in one bowl from less than 10 ingredients. It is also vegan and can be made gluten free.

- maple syrup - Maple syrup serves as the unrefined sweetener.
- avocado oil - Avocado oil adds healthy fats and moisture to this recipe.
- baking powder

- sweet potato - you can sub in an additional banana or pumpkin
- maple syrup - you can sub in honey
- avocado oil - can be subbed with olive oil
Step-by-Step Instructions
Add all ingredients to a bowl and mix.
Add batter to a loaf pan and bake.
Let bread cool and dig in.

Ingredients
- 2 medium sized mashed bananas extra spotty or brown
- ½ cup mashed sweet potato
- ⅓ cup avocado oil sub any liquid oil
- ⅓ cup maple syrup
- 1 ½ cups spelt flour
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- pinch salt
- ½ cup chocolate chips

Instructions
Preheat oven to 350 degrees.
Add all ingredients to a bowl except for the chocolate chips. Mix until just combined.
Fold in the chocolate chips to the dough.
Line a loaf pan with parchment paper. Add dough to the pan and bake for 45-55 minutes. I have a run of the mill oven and baked mine for 50 minutes on the dot.
Let loaf cool for at least 20 minutes so it sets. Dig in and Enjoy.
Notes
Do not sub out the spelt flour for anything except for all purpose or all purpose gluten free flour.

Could you use coconut oil? Looks delish!

Olive oil would be a better sub because it is a liquid oil. Coconut oil should work but I can't say for sure.
